Zucchini Vegetable Medley

This dish is a combination of summer vegetables that can make a vegetarian meal on its own or can accompany any meat dish. Grandma D. kept a large vegetable garden and her products were the foundation of this dish. Since the DellaPietra family loved her home fried potatoes they became an integral part of this recipe.

2-3 large zucchini
Slice zucchini thinly and sauté in small amount of oil until soft and golden. Add salt and pepper.

½ - 1 medium onion
Slice as much onion as you like and add to zucchini pan as it cooks. Onion should be transparent.

2-3 medium potatoes
Slice potatoes and cook as home fries in a separate pan. When golden brown add to zucchini pan.  Add small amount of salt and pepper.

1 large green pepper
Slice green pepper lengthwise and fry.  Add to zucchini pan.  Mix all together. Add a few sprigs of parsley to pan, cover and allow all to cook slowly for a few more minutes.
