
Zucchini Bake
This is another way to use zucchini from your summer gardens. A good appetizer; can be frozen before using. An easy and quick recipe to make.
3 cups thinly sliced zucchini
1 cup Bisquick
1/2 cup chopped onion
1/2 cup grated Italian cheese
2 Tbsp chopped parsley
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp oregano (optional)
Dash of black pepper
1 clove garlic, minced
1/2 cup vegetable oil
4 beaten eggs
Beat eggs. Add all other ingredients. Spread evenly in a greased 13 x 9 pan. Bake at 350 for 40 minutes or until golden in color and toothpick comes out clean. Cut into squares.
