
Ricotta Cheese Pie

An easy version of the elaborate Easter Ricotta Pie found in many Italian cookbooks. 1 ¼ lb. Whole milk ricotta cheese |
Preheat oven to 375º. Place piecrust in oven until lightly colored. In a large bowl mix ricotta cheese, sugar, egg, and cinnamon. Ricotta cheese can be strained slightly if it is too watery. Pour mixture into cooled piecrust. Place back in oven for approximately 1 hour or until top is lightly golden.
