
Easy Breakfast Casserole
A favorite of the young people in our family.
20 oz. pkg. frozen hash browns, thawed
4 cups shredded Monterey Jack or Cheddar cheese
2 cups cooked ham, diced
7 eggs
1 cup milk
½ tsp. salt
½ tsp. ground mustard
Place hash browns in a greased 13 x 9-inch baking dish. (I choose to brown the potatoes first to give a crunchy texture to the dish.)
Sprinkle with cheese and ham; set aside. Beat eggs, milk, salt and mustard together; pour over ham. Bake, covered, at 350 degrees for 1 hour. Uncover and bake an additional 15 minutes or until golden. Makes about 8 servings.
