Holiday Brunch Casserole

This recipe may be prepared ahead and refrigerated overnight before baking.  It also makes a nice lunch dish.

1 pkg. Jimmy Dean Sausage (1 lb.)
1  5 ½ oz. box of seasoned croutons
4 eggs
2 cups milk
1 10 ½ oz. can cream of mushroom soup
1 16 oz. pkg. frozen vegetables
1 cup cheddar cheese, grated
1 cup Monterey Jack cheese, grated

Line the bottom of a 9 x 13 greased baking dish with croutons. Cook sausage (break up and separate while cooking) and sprinkle over croutons. Beat eggs and milk in a large bowl until thoroughly mixed. Add remaining ingredients, mixing well. Pour egg mixture over sausage.

Bake in a 350 degree oven for 1 hour.
